The rice cooker is a fantastic invention. Making this dish was a breeze as it's so easy. Marinate, quick stir fry and everything into the rice cooker. Simple. There are many nights where I just don't feel like cooking or want a simple dish that require the least brainwork. Most of all, it will not break your budget.
One Pot Chicken Rice (4 servings) 500grams of boneless chicken thigh/breast cubed
5-8 dried shitake mushrooms
2 lup chong (or cured chinese sausages)sliced.
2 cups of chicken stock
1 tablespoon of garlic
2cups of rice
Marinate1 tablespoon of dark soya
2 tablespoon of light soya
1 tablespoon of oyster sauce
generous dashes of pepper
1 tsp of sesame oil
2 tablespoon of chinese wine
Marinate chicken for 10-15 mins. Meanwhile, dehydrate mushrooms with a bowl of hot water. Sliced.
Meanwhile, par-cook rice using 1 1/2 cups of stock in the rice cooker.
Gently cook lupchong over low heat. Drain some of the oil. Add chicken and gently stirfry till almost cooked through. If it is a little dry, add some stock. Don't forget the mushrooms. =) Add the mixture directly into the ricecooker and cook till done. Sprinkle some shallots and you have an easy one-pot dish!
Stifry some greens to go with this.

Oh I see, you par-cook the rice first before adding in the ingredients to cook completely. I definitely did it wrong as my rice always undercooked before. Hehe...from now on I should do it your way. Yummy bowl of one dish meal, I like!

I totally agree with you. This is so easy, yet so so tasty.
Ahh... I used to cook this a lot, till I changed my rice cooker to a simple basic one. I do fry my chicken and bits first but this cooker is really too quick to cook so am not sure if it will work as well. Hope to try soon again. :)

singarishgirl-hmm.. ya, i think having a quick ricecooker might be a problem for this dish.. but if we precook the chicken and stand next to the rice cooker..add it when the water is boiling? hmmm/..
Well, I still don't think it can work. I have to fully cook the chicken. Really miss it as I used to do it once a week. And cook it same way like you do. Hehe. Sometimes I add in a few bits of salted fish for flavour.
