Green and Black Olive Loaf


Olives are an acquired taste. I have never tasted olives until I arrived in Aus-and even so, it took me some time to get used to them. I encountered these strange black rings in my pizza first, and then slowly I realized then can be used in pasta and salads as well (read Amy's Very Culinary Greek Summer salad) . Browsing through some of my old cookbooks, I found this savoury loaf. Made this one Friday evening for a group of friends and we nibbled over hot tea and good chats about the week.

Green and Black Olive Loaf


180grams flour
3 tsp baking powder
3eggs
100 grams olive oil
100 ml milk
100 grams grated cheese
200 grams assorted olives stoned
salt and pepper

Preheat oven to 180C. Line loaf tin with baking paper.

In a bowl, mix flour and baking powder. In another bowl, whisk eggs, oil and milk. Season.

Pour egg mixture to flour mixture and fold gently. Stir in cheese and olives. Pour mixture to prepared tin and bake for 50 mins. Allow to cool before turning it out.

PS- bacon or ham can be added.

i love black olives!! i agree its an acquired taste coz it smells/tastes very strong, somewhat smoky. i hv alot of friends who hate it :D and glad to know this loaf doesn't require any yeast. i typically shun away from recipes that require yeast haha coz they take too long to proof & i had bad experiences of using dead yeast!

Since I started making pizza, I had been searching for black olive. This loaf is new to me. Judging from the photo, it looks so delicious. ;)

Evan- ya! It took me some time but then I really do like the strong taste. My favourites are from a little shop in Fremantle Markets. They marinated it themselves!
I think this loaf is more like a half way cake too..so it's slightly more moist and does not require yeast.

Food for Tots- awww. thanks dear! it was new to me too but I was glad it turned out ok.

Mikky- haha.. Married life is GREAT! Three months as of yesterday and we are very happy and blessed to have each other.
