Cranberry Cinnamon Waffles
I'm a breakfast person. I love having toasted muesli with yogurt, warm oats or poached eggs on bread. I guess, if I really have to wake up, I might as well be greeted with something warm, toasty and delicious.
Hubby and I have all kinds of agreement. One is that if I am in charge of lunches and dinners, then the least he could do is to do breakfast and dessert. I know, it's weird but hey, anything to keep a marriage going right?
He makes a mean coffee. Serious. From our little espresso machine given to us as a wedding gift. He did this without going through a coffee barrister course.
So I guess, on long weekends or on some occasional days.. I give him a break now and then and make him breakfast. You know, the kind that men like. Bacon, eggs (scrambled or fried), sausages....
Or waffles.
I adapted this from Little Corner of mine. I love how she added cranberries and oats to it! For mine, I added a healthy dose of cinnamon and used buttermilk instead. Oh and for a treat..just a few sprinkles of dark choc chip.
Cranberry Cinnamon Waffles (Around 8 waffles)
2 eggs
2 cups of buttermilk
1 cup plain flour
1/2 cup of instant oats
4 tsp of baking powder
1 cup of cranberries
1 tablespoon of honey
1/4 tsp salt
2 tablespoon of brown sugar
2 tablespoon of dark choc bits
Whisk eggs, honey and milk together. In a dry bowl, combine flour, oats, baking powder, cranberries, chocolate and sugar. Fold wet into dry. Preheat waffle iron. Spoon and cook! EAT!

Aww, I loved the shape of your waffle maker, so pretty and can be torn into little hearts. Your post reminded me I haven't made waffle in a while, I should alternate this with buns. I made lots of buns these days. :P

I like having protein for breakfast so when I'm craving pancakes or waffles, I have breakfast for dinner! I think these are gonna have to be next on my list. Cinnamon cranberry? You amaze me.
aww how sweet! I usually only have oats or cereal with milk for breakfast, too lazy to do anything more in the morning :P

Oh yeah your husband makes really nice coffee! I like the arrangement you guys made. My husband started to make weekend breakfast because he knows I stay up late on weekday nights for blogging. Poor guy but he knows I work hard (and he's the more serious one about my blog - so maybe that's why). We do need some sort of nice arrangement in marriage. Yes! Your waffle looks so delicious! Our waffle is so basic we need to try this next time. Thanks for sharing!
