Spicy Bacon Tomato Pasta


Every Tuesday is pasta night. I'm not sure why I set that routine but it just makes planning for my weekly meals alot easier.

Having since I discovered lean bacon, I have been indulging in it from time to time. I know the words "lean" and "bacon" doesn't go well together and you might even say that "lean bacon" is an oxymoron. Still, I went without bacon for 2 years before I discovered this one, so cut me some slack =)

I stay away from instant pasta sauce these days, opting to use fresh tomatoes and/or a can of the chopped variety. It hasn't failed me yet and I now declare "can tomatoes" along with "can chickpeas" as staples in the pantry cupboard.

As the weather gets colder, I crave for spicier food. I also realized that if I cook the bacon first, the tomato sauce absorb the lovely flavour that the bacon provides.


Spicy Bacon Tomato Pasta (serves 4)
100 grams of lean bacon chopped
1 onion chopped
1 tablespoon of garlic
2 fresh red chilies chopped
1 can of chopped tomatoes
1 fresh tomato
1 tablespoon of tomato paste
Seasoning
italian mixed herbs
250 grams pasta of your choice.

1) Cook pasta according to directions.

2) Heat pan. Add bacon (w/o oil). Let it sizzle and cook till brown. Include in the onions, garlic and chili and cook till soft. Stir in can of tomatoes, fresh tomatoes and paste. Keep stirring. Add some stock/liquid if required. Sprinkle herbs and simmer for 10 -15 minutes. I like to mix my pasta up in the sauce to soak up the flavour before serving. Sprinkle with Parmesan cheese and cracked pepper if desired (although I heard that we shouldn't do this for tomato based pasta since it can be too strong for it).

  5. I prefer canned diced tomatoes too. That and chickpeas are both pantry staples for me. I still occasionally use sauce though.
