20 Days to Christmas! Olive Oil Chocolate Strawberry Cake




Perhaps you are looking at something light for dessert. How about a chocolate cake made out of olive oil rather than butter? I adapted this recipe from recipezaar to incorporate the fruit ofthe season- strawberries. It's also good for ppl with a dairy free diet.

Despite not using butter, the cake turned out moist. My only concern is that it uses 5 eggs-that's alot for a small cake!


Olive Oil Chocolate Strawberry Cake
5 extra large eggs
3/4 cup sugar
1 tsp vanilla extra
3 teaspoons baking powder
1 cup of flour
2 tablespoons of cocoa
1/2 cup of olive oil
1/2 cup of boiling water

1 punnet of strawberries halves

1) Sift all dry ingredients together except the sugar. Beat eggs and sugar till thick and almost double in volume. Add in vanilla extract.

2) Fold dry ingredients into egg mixture. Pour half the batter in 9 inch prepared round cake tin. Place strawberries on it. Pour the other half of the batter into tin.

3) Bake for 40 minutes. Cool and dust with icing sugar!

  4. yeah! i use olive/other vegetable oil to bake all the time! most of the time turns out ok (except when i hv disasters hiks)...this one sounds good!

  6. hmmmn... sounds interesting. tried plain olive oil cake before and it was good.. so with strawberry and chocolate in it, what could go wrong, huh? :o)

  7. That is a lot of eggs for 1 cup of flour. So, this cake is not exactly healthy either, but sure looks yummy!
