Orange and Hazlenut Torta


On Tuesday, I posted about Lone's farewell lunch. I decided that given our love for cakes and chichats about coffee/cake, it is only fitting also to serve cake as dessert. I chose a fruit and nut base one as that is one that I know both of us will go for if we spot it in the shops.

Also, it's on the cover of the May 2009 ABC Delicious Mag and if you have seen the photo, it would have been hard to resist!



The result is a nutty flavored moist cake. It has a slight bitter tone to it but that is because I reduced the amount of sugar in it. I forgot to add in the carrots which could also contribute to the slight bitter tone. What I love is the use of hazelnuts as decorations and the lovely orange marmalade glaze.


Orange & Hazelnut Torta
1 thin skinned orange
225 butter
200 grams brown sugar
2-3 carrots grated (I Forgot to add this!!!!)
3 eggs + 1 egg white
1 1/2 cups of hazelnut meal
2 cups self raising flour
1/3 cup of caster sugar
1/2 cup of orange marmalade
3/4 cup of hazelnuts toasted

Place orange in pan and cover with water. Boil and simmer on low heat for 45 mins. Cool.

Preheat oven to 180C and lined a 9inch cake pan.

Quarter orange and discard seeds. Then puree orange with butter brown sugar and carrot. Add eggs through feed tube. Add hazelnut meal and whiz till combine. Transfer to bowl and fold in flour.

Spread mixture in cake and bake for 45 mins or till skewer inserted comes out clean. Cool for 10 mins and transfer to rack to cool further. Warm marmalade in pan with 1-2 tsp of water. Stir in nuts and keep warm. Spoon syrup over cake.
