Coconut Almond Walnut Granola



This is one of our favourite breakfasts at the moment. It's full of antioxidants, good fats and keeps you full for longer. I like mine with yogurt, while hubs like his with almond milk.

I like to see breakfast as a meal to arm us for the day. The calm before the storm perhaps. There is just something about a good breakfast that makes the day so much nicer, and much more special.

While we are not eliminating grains altogether (read paleo for more information), we do try to limit it. This is a good alternative, and perhaps to us, a even better alternative to the usual oat based granola or muesli.

Coconut Almond Walnut Granola 
1 cup of coconut flakes or chips
1/4 cup of coconut oil
1.5 cup of almonds
1.5 cup of walnuts
2 tsp of cinnamon
1 tsp of mixed spice

(try experimenting it with macadamias, pepitas and sunflower seeds)

Preheat oven to 160 C. In a bowl, mix everything together. Pour to baking tray. Bake for 20 minutes to 30 minutes - or as brown as you like it to be.

  4. you're on a paleo diet? i didn't know you're limiting grains! i'm contemplating on going on that diet (after i tried dukan for 1/2 day and failed lol).

    i've stopped drinking milk and limiting ever since i read that they contain hormones (thats why some people get acne and hormonal imbalance), guess thats the only thing i'm religiously avoiding hehe.

  5. We have granola every weekday morning for breakfast. Too bad they are not homemade but store-bought. I thought having whole grains is ok as part of diet (abt 25% of whole grains per diet shd be fine?)

    Evan- I'm sort of looking at the guidelines of paleo but not strict per say! chat with you on email ;)

    Tigerfish- I think it depends. Whole grains- as natural as possible, isn't as bad. However, there are people who react to grains. Also, most grains are not natural.. they have been processed ;) I found that by limiting grains, it helped with our digestion. We don't eliminate it though. Also, a lot of "whole grains" have added things such as sugar in different forms in granola.
    Another myth is that we need fibre from whole grains- I beg to differ. Fibre comes from eating vegetables like brussel sprouts, spinach..etc.
    Whole grains can also raise blood sugar- and it is a kind of carb.
    All in all though, I still believe that moderation is the key. The problem is...everyone's definition of moderation is different :p
