Mango Chicken Wrap
Over the past year, I have learned to include fruits in meals. Not just in desserts but mains as well. For instance, having slices of pear in my pizzas (u just have to try it out!), in salads and now in a wrap.
I'm not sure where the inspiration comes from but it was probably from a magazine (possibly "ABC Delicious) while I was waiting in a queue. Nevertheless, this wrap makes a good brunch if not a meal by itself. Great for entertaining as well. We had a friend over from Adelaide a few months ago and I made this within 20 minutes. I wanted something quick as I would rather spend time with her than to slave over the kitchen stove. The chicken was bought and shredded the night before.
Mango Chicken Wrap
1/2 bbq chicken shredded
1 mango cubed
3 tablespoon of Mayo
Pepper
(pinch of chili powder) -omitted here but I tried it before and adds a bit of kick to it.
4 pieces of Corn wrap
Switch sandwich toaster on. Combine mayo, mango and chicken together. Add seasoning. Spoon 2 tablespoon of filling into the corn wrap. Fold it. Toast it for about 3-4 minutes while you assemble the salad.
Avocado and Feta Salad
Mixed salad leaves
50grams of feta
1 cubed avocado
walnuts crushed
2-3 tablespoons of olive oil
Toast walnuts in a pan with oil. Mix salad, avocado and feta together. Sprinkle walnuts onto the salad.
ps-when our friend came to visit, I omitted the walnuts (allergy) and added a drizzle of olive oil instead.

this definitely looks fast and simple..but the shredding im sure takes more then 10-15 mins rite?

Hey, I've also included a fruit in my cooking today! Hmmm...I shall keep a suspense first since it will be some time before I post it! Refreshing mango wraps...yum yum!
ReplyDeleteAvocadoes and mangoes are not so unusual to include in a main savoury meal, especially in Indian food, for mangoes and European food for Avocadoes. Recipes looked great, definitely worth me trying them sometime.
