Minty Chocolate Cookies
I never understood the magic of dipping cookies in milk. Hollywood movies portrayed dunking cookies into milk as a self-soothing thing. You know, the "you will feel better after some cookies with milk". I watched "Stranger than Fiction" a while back and there was a scene where Maggie Gyllenhall (Ana Pascol) felt sorry for Will Farrell (Harold Crick) because he was never offered cookies with milk when he was a child. She made him sit in front of her and swallow/chew home-made cookies with a glass of milk.
Daphne's cookie dunking experience- Tim-tams in coffee-checked. Oreos in coffee-checked. Cookies in milk- blank.
ARGH!
I was inspired by a host of blogs making minty chocolate cookies a while back. Fatboyrecipes with his mint chocolate squares and Nigella Lawson's dark chocolate cookies with mint glazed made me drool on the keyboard. Then we have Singairishgirl's chocolate mint cookies that practically called my name.
So this was what I did. I adapted Singaishgirl's recipe and added a chunk of mint chocolate in the centre.
The result? Soft crumbly cookies with a mint surprise. Perfect for dunking. The only thing though, I dunked them in MILO!
Minty Chocolate Cookies
Ingredients -
3/4 cup butter
1-1/2 cups packed brown sugar
2 tbsp water
2 cups dark chocolate chips
2 eggs
2-1/2 cups all-purpose flour
1-1/4 tsp baking soda
1/2 tsp salt
36 chocolate mint sweets
1 tsp mint essence
Method -
1. In a large pan, over low heat, melt butter, sugar & water until butter is melted. Add chocolate chips and stir until partially melted. Remove from heat & continue to stir until chocolate is completely melted. Pour into a large bowl and let stand for 10mins to cool off slightly.
2. At high speed, beat in eggs, one at a time into chocolate mixture. Add mint essence. Reduce speed to low & add in dry ingredients, beating until blended. Chill dough about an hour.
3. Preheat oven to 180 deg C.
4. Roll dough into balls with a piece of mint chocolate square in the middle & place on cookie sheet about 2 inches apart. Bake 10 - 15mins.
wow..i can the filling flowing out!...love soft cookies..just dunno why its doesnt get as much credit as those crunchy cookies..

ReplyDeleteCool and very interesting cookies! The liquid green center reminds me of some kind of special Halloween or Ghostbuster cookie. That's it! You should call them Ectoplasm cookies! They sound delicious, thanks for sharin!
