Imagine this:
You had a hard day of work. You missed the bus but finally arrive home 1/2 hr later than usual. Just as you are about to enter the door, a whiff of aroma hits your nose. You open the door and you saw that the house is tidy and dinner is ready.
Won't that be wonderful?
I know that is what AR long to have. Most of the time, he gets the dinner but a tidy house? well.. That depends on which day.
Time just seem to pass so quickly these days. I'm back in Uni-this time as a staff member (temporarily) and a blink of an eye-3/4 of the day is gone. I can only imagine what it will be like entering the workforce as a permanent worker.
I'm starting to be a real fan of making food in bulk and freezing them. Makes life so much easier.
Crisp parcels filled with creamy seafood was one of the meals I made in bulk. Well, I did a total of 16 parcels and froze most of them. I made a grilled vegetable salad and da tah! Simple dinner. =)
Seafood Morney Puffs
4-5 pieces of fish fillet in small chunks
10-15 pieces of baby squid cleaned, cut in small chunks
1/2 cup of frozen vegtables
Sauce
2 tablespoon of butter
1 tablespoon of flour
1/2 cup of milk
1/2 cup of chedder cheese
seasoning
4 pieces of puff pastry-each piece quartered to make 16 squares
1) Make sauce- melt butter, add flour. Stir till golden. Whisk in milk till smooth. Add cheese and simmer.
2) Gently heat some olive oil in pan. Fry seafood and frozen veges till nearly done. Transfer seafood to sauce. Taste and season. Cool filling.
3) Preheat Oven to 200C
4) Place 1-2 tablespoons of filling into the middle of the pastry. Fold in half. Seal with beaten egg. Egg wash pastry. Repeat for 15 other puffs.
5) Bake for 25 minutes till puffy and golden.
6) Serve with veges! =)

I'm love make in advance meals too. Quick question, do you freeze the parcels before or after you bake them?
its a great idea to freeze ... but I dunno the proper way to do it for the different types of foods keke... I love the image of the squid filing coming out from the money puff ... yum...

thx for the inspiration
on most of my lazy days...i devour instant noodles or bbq pork rice hehe
This is a sweet idea --- preparing these lil bundles of deliciousness ahead of time so that popping them in one's mouth is all one needs to do.
And I never had seafood puffs! Sounds delectable...
creamy fish and squid puff. thats the first! sounds goo tho. ;)
So much easy to make with the ready puff pastry! Great idea to make in bulk and freeze them.
Wow, you are making me hungry already, sitting here before breakfast. Hehe. Lovely parcels, Daph.
I like your idea of preparing food in bulk. What a great way to save those busy days.
dee- I baked them then freeze. I find it easier since the puff pastry looks slightly soggy before cooking.
