A bit of both- Tuna Sandwich + Red bean pancakes!




What do you do during a cold winterly day during spring? Stuck at home with piles of paper around me, I made myself a good old tuna sandwich. Chilli Tuna between 2 slices of fresh Pane De Casa bread from Brumby's. Topped with baby spinach leaves, cheddar and good sprinkle of cashews....toasted to perfection. Yes, that was a quick and delicious sandwich for lunch!




I realised that my papers make a good backdrop to the sandwich! Don't you think? LOL


Here is something I made a few weeks ago for a 11 year old girl birthday party. Two years ago I was "formally" introduced to this family as Mr Ar's gf during her 9th birthday- I brought my all time favorite brownies (and learned quickly that chocolate are a good way to ease into situations like that!). Anyway, she is 11 now!! 11- a young lady.

So I brought this Japanese Red bean pancakes. Sorry that the picture is yellow (it was BEFORE I received a new camera and changed the lightbulb).




Someone commented it looked French! DOH! I'm sure the French do a better job.


Japanese Red Bean Pancakes

80grams of red bean paste
125 grams of flour
2 tablespoons of caster sugar
2 eggs
25grams of butter
oil for greasing pan


Sift flour and baking powder. Add sugar.
Combine eggs and milk together. Whisk well. Add the add mixture to the flour and stir till well combined.

Heat a pan with oil. Drop 2 tablespoons of batter onto pan (Spread it out a little as I found the first few ones I did were too thick!). Cook for approximately 2 mins or till bubbles appear on surface. Turn over for another 30 seconds or so.

Sandwich with red bean paste.

You should have 12 pancakes! (9 in the photo because I ate one and Mr Ar ate another and then another before the party).

east meets west- Everyone was too full and I ended up taking a few home (not that I'm complaining, it ended up in my tummy). ;p

big boys oven-yeah! they are really cool and easy to make. hehhee..oh yeah..fishy tuna sandwich ;p.. hope i didnt stink that much! LOL
