Assam Fish and Stir Fry Spinach

What a weekend. A blink of an eye and it's over. One week of engagement and we are slowly back on earth. Among the congratulations, it's also odd to observe that people who we are closest to (e.g. our parents) are the least excited. Friends and extended family however are over the moon. Really strange indeed. Perhaps our parents' expected' us to get hitched soon and wasn't as surprised. Regardless, it's pretty exciting stuff and the journey of preparation has began.

While other people may think differently, we are heading for a longer engagement (approximately 1.5year-2years) in order to allow us time to be mentally prepared for a life time of bickering, compromising, laughs, cries and prayers. As there will be 3 wedding celebrations, we believe that a longer duration will help us get things in order too. I'm fortunate and blessed to have 2 beautiful best friends who are sisters to me and will be helping me co-ordinate things. Also, other people have raised their hands to help (Irene, RR, Da, Min *waves hi!) and so AR has asked me to publicly convey our sincere thanks to them first! hehehe (u gals/guys can't run away now ok?).

Yesterday, my mother told me that she has taught me organization skills hence I should be able to handle this with AR without her (she says preparation for a wedding can be a test itself since lots of compromises will occur). Well mum, thanks for the compliment but..... I think YOU ARE GOING TO HELP TOO! Thanks mum, I love you! ;p

PS- my parents read this blog and most recently, so does my grandma. Although she can't read, she looks at the pictures and when I ring home on Sunday, she will either laugh at my cooking or give me tips on how to improve on it ;p. Seriously, yesterday she laughed at my chocolate cake....

So POPO! this post is for you!! I don't just make sandwiches, wraps and have western style soups! I will never forget my Chinese Cantonese heritage and I do cook Chinese style meals every week!! I promise!!

Ok..so this isn't exactly Chinese but PoPo, you taught me how to eat spicy food and appreciate Assam (tamarind) as well as finding out nice packs of sauces to quicken the process of dinner... so here we go! My very lazy meal of

Assam Seafood and Stir Fry Spinach with Garlic and Oyster Sauce


Love this brand of Brahms- Their Rendang sauce is just as good! This one has the right tangyness to it BUT NEVER follow their advice for the water amount to be added to it. Way too much, I usually reduce it to about 1/2 a cup and just adjust accordingly during the cooking time.

I used squid and barramundi fish. I can hear grandma going "did you add tomatoes?" The answer is "no! I forgot..sorry popo!"


I'm a huge fan of spinach. Just a simple stirfry with garlic and oyster sauce. Sprinkle some fried shallots and it's done. I didn't add any salt since the oyster sauce provided the flavor.

Oh my goodness! Look at the time! I have to get some more stats done before my meeting this afternoon. More importantly, tonight is the LAST SEMINAR that I have to attend as a Dpsych student FOREVER! Woohoo! 7 years of University life of attending classes. Now, it's solely my thesis. Me and my thesis... argh. ;p

I use Brahim's too!!! Every time i go home, its a must for me to bring back a few packets of brahim's.Asam pedas is one of my favorites. They started selling Brahim products here too in the asian groceries recently!
