Two Way Pizzas- Spicy Chorizo and Cherry Tomatoes + Smoked Trout with Horseradish and Avocado






 It has been ages since we made some pizzas at home. Pizzas are not as unhealthy as what people usually think of- unless of course, it is filled with heaps of cheese and not enough protein or vegetables. I'm a big fan of making them at home as I can control how much per ingredient I am using. It's also a great back up recipe to use when travelling with mates. I recall how much fun we had making mini pizzas together with a few friends.

Hubby suggested using chorizo- now, that isn't exactly the healthiest. But one can control the amount of fat but cooking it in a pan till all the fat render out. Then use it as a topping. This version uses mango chutney as a base sauce and feta cheese.


The other one was slightly more my kind of pizza. Pieces of smoked trout with avocado, rocket and feta. Yum!

Spicy Chorizo and Cherry Tomatoes Pizza
1 pizza base- home made or store bought
1 chorizo sliced
1/2 punnet of cherry tomatoes chopped half
2 tablespoon of spicy mango chutney
1/4 cup of cheddar cheese
few cubes of feta cheese

Pre heat oven at 200C. Spread chutney on pizza base and add some cheddar cheese. Place cooked and rendered fat chorizo on it. Sprinkle cherry tomatoes and feta cheese. Bake for 20 minutes.

Smoked Trout with Horseradish, Rocket and Avocado Pizza
50 grams of smoked trout
1 tablespoon of horseradish sauce
1/2 avocado
few cubes of feta
1/4 cup of cheddar
rocket leaves
pizza base


Spread horseradish on pizza base. Sprinkle smoked trout, cheddar and feta on it. Bake for 20 mins. Once done, place avocado and rocket leaves on top. Serve.

Garlic Prawn Bocconcini Cheese Pizza



Sometimes, I wonder if pizzas are like open faced sandwiches. Cheesy ingredients toasted under heat resulting in melted goodness on crisp dough. I wonder if anyone ever top another piece of dough on top of it and eat it like a sandwich? Ahh.. imagination + random thoughts!

Having some prawns and bocconcini cheese on hand, I thought it could be interesting to put a different type of cheese rather than the traditional mozzarella and cheddar combination. Later, I found out that bocconcini cheese is a type of mozzarella-rather, it's also called little morsels which suit the tiny looking cheese.


Hubby says he prefers using bocconcini than the usual cheese. He commented that it tasted lighter. Perhaps this cheese has more use than bruschetta.

Garlic Prawn Bocconcini Cheese Pizza
3 pita bread
2 tsp of garlic
1 to 2 cup of shelled prawns
1 cup of sliced mushrooms
3 tablespoon of tomato paste
around 200 grams of bocconcini cheese

Preheat oven 200 C. Line 2 baking tray with baking paper. Place both pita bread on the tray. Spread a tablespoon of paste on each bread. Sprinkle garlic, mushrooms and prawns on it. Bake for around 10-15 mins.

Puff Pastry Pizza

I have not had take out pizzas for ages. I guess I have always thought that making pizzas using chapati bases or bread bases are a far more cheaper, faster and healthier way to do so. Don't get me wrong though, I still enjoy my fast food. It's just that I like to think that I can have that additional slice without adding inches to my waistline. ;)





Recently, I saw adverts for Puff Pastry Pizzas. And I thought..what a GREAT idea! Now, I guess the amount of fat and calories would be double or even triple the amount of normal pizzas so I thought I can try making 2 versions of it at home.It's not the healthiest in the world, but at least it was better than eating out.That way, I can choose the ingredients carefully (re lower fat cheese, less cheese, type of sauces...etc)

It turned out to be like... a huge tart! LOL It was good though. We totally had a  blast eating it. My versions were Chili  Garlic Feta Prawns and BBQ chicken.

Puff Pastry Pizzas
2 pieces of puff pastry

 Chili  Garlic Feta Prawns
100 grams of shelled prawns
20 grams of feta
1 cup of low fat mozzarella cheese
1/2 cup of sliced mushrooms 
1 tsp of  garlic minced
1 chili
1/2 red onion chopped
2 tablespoon of tomato paste


Spread tomato paste on puff pastry. Place onions first. Then sprinkle prawns and mushrooms over it. Crumbled feta and garlic over the prawns. Sprinkle cheese on it. Bake in preheated 200 C oven for 20 minutes.

BBQ Mushroom Chicken
1 cup of cooked chicken with bbq sauce
1/2 red onion chopped 
1cup of mushrooms sliced
2 tablespoon of bbq sauce

Spread bbq sauce over base of puff pastry. Add onions and mushrooms. Place chicken on it and and squirt some more bbq sauce on it. Sprinkle some cheese. Bake in 200C preheated oven for 20-25 minutes.


Served with salad!

Pizzas- Pear and Pinenuts

I blogged about this before. Making pizzas at home and/with guests is easy. Best of all, your guests can be involved in the process of it. In fact, we are going on a road trip on Friday! and this pizza is on our menu for one of the dinners as we travel from Adel to Mel.


Bakers Delight came out with a fairly new range of their pizza bread base a few months ago. For around $4ish, we get 2 pre baked bread base. Just for fun, and because I thought it would be a simple dish for our vegetarian guest to join us in AND also that my meat lover husband get to have his meat base pizza.

I rolled the base as thinly as I can. I like my crust crisp. Good thing is that this base has plenty of dried oregano sprinkled on it plus some cheese. A tasty crust for sure. 



With generous slices of pear, handful after handful of morezella and cheddar cheese.. not forgetting pinenuts, this is a winner combination. One that I would have NEVER thought of before trying it at Little Creatures Brewery.

Pear and Pinenuts Pizza
1 Pizza Base (you can also see how I did mine previously here)
1 pear sliced thinly
around 1 cup of pizza cheeses such as mozzarella and cheddar.
around 1 handful of pinenuts.


Roll pizza base as thin as possible. Sprinkle some cheese on it. Place slices of pear on it, top with cheese and then with pine nuts. Bake for around 15-20 mins in a pre heated 200C oven.

3 ways to Chapati Pizza

A couple of months ago, Philadelphia cheese had a promotion on their cookbook- buy 3 tubs and get 1 cookbook for free. Pretty good deal hey? I'm have a soft soft heart for bargains so couldn't help resist buying 3 tubs of cheese even though I know it will take us really long to finish it. Baking a cheesecake could be an option but I wasn't in the "mood" to do so. Besides, there was a time factor with the planning of our honeymoon + renovations taking place approximately the same time. 

Thankfully though, the cookbook turned out to be a winner. It featured little recipes that are pretty easy to make (all using Philadelphia cheese of course) but certainly provided me with a different perspective on the humble cream cheese. Pizza- no a problem, Pasta- sure! Patties involving cream cheese-yummy, What about crepes and cream cheese- can be done.

While adapting their "Chilli Prawn Pizza" and "Spanish style Chorizo Pizza", I came up with 3 versions in our old kitchen. I used chapati bases- you can choose to use mini pita breads if you wish.





Chilli Seafood Pizza (serves 2)
1 pizza base of your choice
2 tablespoon of philadephia cream cheese
100 grams of marinara mix
2tsp of dried mix heaps
1 tsp of dry chilli flakes
a handful of rocket leaves

Preheat oven to 180C. Line tray with foil or baking paper. Spread cream cheese on pizza base, place prawns all over the pizza and sprinkle mixed heaps and chilli flakes on it. Season with salt and pepper if you wish. Bake for 15 mins. Cool and then top with some rocket leaves.



Tomato Seafood Prosciutto Pizza (serves 2)
1 pizza base of your choice
1 tsp of tomato paste 
2 strips of prosciutto
50 grams of marinara mix
1 tablespoon of cream cheese

Preheat oven and prepare tray. Spread tomato paste on it and place seafood evenly. You can use a knife to cut the prosciutto into strips but I just use my hands to do that. Dot the pizza with cheese. Bake for 15 mins. Serve with cracked pepper.



Spicy Tomato and Prosciutto Pizza (serves 2)
1 pizza base of your choice
1 tsp of tomato paste
2 strips of prosciutto
1 tomato chopped
1 handful of rocket leaves

Preheat oven and prepare tray. Spread tomato paste on pizza and sprinkle diced tomato on it. Place prosciutto strips and mushrooms. Bake for 15-20 mins and when cool served with rocket leaves.
