Oatmeal Chocolate Chip Cookies

I'm so into cookies again. On most weekends, I prefer baking cookies than cakes. It's just more practical I suppose. Occasionally though, I take the chance to bake cakes when we visit friends/family.

Repeat after me:

Oats are good for you.

I have been trying to increase my oats intake. Especially after reading all the health benefits of oats can have on your digestive system. I'm not sure if it is still healthy after the addition of butter and sugar in the cookie batter but hey... anything to make us feel less guilty right?

This cookie is slightly crisp on the outer and soft inside. I re-baked it after 2 days and that made it cruncher.

Oatmeal Chocolate Chip Cookies (around 45 cookies)

1 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking powder
220grams butter
1 cup light brown sugar
1 cup granulated sugar
2 large eggs
3 cups oats
1 1/2 cups chocolate chips

1. Preaheat oven to 350 degrees, and line two large cookie sheets with parchment paper.

2. Whisk flour, salt and baking powder together in a medium bowl.

3. In a separate bowl, by hand or by mixer, beat butter until creamy. Add sugars and beat the mixture until fluffy, about 3 minutes. Beat in eggs one at a time.

4. Stir dry ingredients into butter-sugar mixture with a large rubber spatula. Stir in oats and chocolate chips.

5. Place dough onto parchment-lined cookie sheets by large spoonfuls (about 2 tablespoons each), leaving at least 2 inches between.

6. Bake until cookie edges turn golden brown, 20 to 25 minutes. Cool cookies on rack. Let cool, and store in airtight container.

I'm on the hunt for more cookie recipes! Any suggestions or links will be appreciated! =)

I love oatmeal cookies. I used to make them, without fail, for every single party I went to when I first started grad school. Yours look gorgeous, and hey, oats are healthy -- even if they do come in a buttery package!

If you want to try something a little different, my favorite chocolate chip cookie recipe is here. You can even replace some of the all purpose flour with oat flour and make them "healthy" ...

I like oatmeal cookies - yes, using the excuse of it being good for you relieves some of the guilty pleasures when eating them! As for ideas, how about some butter cookies, Danish style. I really miss the Kjeldsens brand. Nothing else taste the same.
