Pasta has become a staple in the pantry. It's so quick to prepare and so versatile! We bought a bbq chicken the other day and shredded the meat. I dont know why, but we rarely eat the bbq chicken as it is. Usually we will shred it and add it to some] other dish.
A recent trip to a food expo saw us buying a show bag of cheeses from Blue cow. No, the cheese wasn't blue just because the brand name has the name blue in it. LOL. Regardless of the colour of the cheese though, we fell in love with the sharp Cheddar and lovely crumbly feta.
Our last important ingredient is spinach. Admittedly, that was added to make us feel as if we are fulfilling our vegetable intake for the day.
Feta, Chicken and Spinach Pasta
250grams of pasta
200 grams of shredded chicken meat
1/4 cup of feta cheese
1 cup of spinach leaves
1/4 cup of mushrooms
1) Cook pasta in salted water. Drain.
2) In a large pan, hit up some olive oil. Quickly wilt spinach, mushrooms and warm the bbq chicken through. Add pasta to the pan and toss. Turn the heat off. Crumbled the feta cheese into the pan just before serving.
3) Serve with cracked pepper.
