Lemon cakes with passionfruit syrup + Rockin Girl Award



How can you resist when you see a bag of passionfruits. BIG fat juicy passionfruits? I picked a bag of these beauties up on our way home from York. As I waited for it to ripen and turn all crinkly, my head went bonkers trying to think of what to make with it. Passionfruit Cheesecake?, Passionfruit salad?, stuff myself with passionfruits, passionfruit cupcakes? ARGH.. the possibilities are endless.

In moments like this, I head straight to Donna Hay Classics 2- vaguely remembering there are a few recipes that I said "MUST TRY" but tucked it away into my subconscious memory in a small corner of my brain. So when I flipped to page 54 (how many of you are going to do that? ;p) and saw the beautiful Lemon Cakes with Passionfruit Syrup... I was sold.

The end result? Moist cakes with a heavily scented lemon taste. The passionfruit syrup wasn't too overbearing. They complement each other very well. As per usual, I reduced the amount of sugar. Much as I love my sweets, too much sugar just create havoc to my system. Besides, I thought that the passionfruit syrup would provide the sweetness anyway! :p

Lemon cakes with passionfruit syrup- 12 little delightful cakes

175 grams of butter softened
1/2 cup of caster sugar (It was 3/4 cup)
1 tablespoon of grated lemon rinde
3 eggs
1 1/2 cups of plain flour
2 teaspoons of baking powder
3-4 teaspoons of lemon juice (it was 2 teaspoons)

Passionfruit Syrup
3/4 cup of caster sugar
1 cup of water
Pulp from 7 passionfruits

1) Preheat oven to 160 degrees C. Grease and line muffin tin.
2) Beat butter, sugar and lemon rind with electric beaters.
3) Gradually add eggs and beat well.
4) Sift flour and baking powder over mixture. Fold gently. Add lemon juice.
5) Spoon mixture into tin, Bake for 20-25 mins.
6) Meanwhile, place sugar, water and passionfruit pulp into a saucepan. Stir on low heat till the sguar dissolved. Allow mixture to boil for 6-8 mins or till syrupy.
7) To serve, spoon syrup over cake. Serve warm.

No problems about the lemon rind :) The outcome was brilliant. Pity about the yellow lighting or the picture would look even better! :)
