Ham, Mushroom and Cheese Loaf


Halfway through doing the last tag, my supervisor called me up to say he found some exciting stuff after tweaking my research sample group. So that means I have to stop what I'm editing and wait to see him on Monday before I proceed further writing. DOh DOh Doh! On the bright side, that's 4 studies of stats completed. This very smart brilliant supervisor of mine knows that I'm terrified of stats and even deliberately teased me by saying "I don't know why you find this so hard, it's fun and easy to do". DOH DOH DOH DOH DOH! My reply to him was that he sent me on a roller coaster ride doing all kinds of stats before we decided on the simplest one to use (and rendering 3 months of my work in the bin). Then he said something about how it's the process that we have to go through.. blah blah blah. Must be his ego talking.

So I admire him but want to strangle him at the same time.

I can't help saying grace and thanking God for blessing me with a supervisor that I can work with.

So I'm ambivalent! HA!

I'm NOT ambivalent about this savory loaf though! I know I usually bake something sweet but there are times in the afternoon/evening that I crave for salty food. I made this for a thank you party for uni. I might even make this in mini muffin style for the coming engagement party just before Christmas. It's easy and no fuss!

Oh! and a great way to use left over ham after Christmas as well. Try adding a handful of herbs. I'm sure it will taste great too.



Ham, Mushroom and Cheese Loaf
substitute ham for chicken loaf for my halal friends or you can omit this. =)


300 grams of mixed mushrooms sliced
50 grams of ham sliced

Dry
180grams of plained flour
3 teaspoons of baking powder

Wet
3 eggs
125 ml of olive oil
100 ml milk
salt and pepper

100grams of grated cheese (I used cheddar)

Preheat oven to 180C. Line loaf pan with baking paper. Heat some oil in a pan. Add mushrooms and cook till all the liquid has evaporated. Set aside to cool.

In a jug, whisk together wet ingredients and season with salt and pepper. Using a large bowl, mix the flour and baking powder together.

Pour the egg mixture into the flour mixture and fold in gently. Stir in grated cheese. Add the mushroom mixture and ham in. Fold/mix.

Pour mixture into prepared tin. Bake for 45-50 minutes. Allow to cool in tin before turning it out.

Ham, mushroom, cheese...I know they go well together. Oh, and in breads...savory buns...I love such breads and buns.

I make a tasty loaf out of canned salmon sometimes...right now I am trying to figure out what to do with a pound of bean sprouts...

Entering your 3rd year of PhD-that's great! At the same time, I know what you mean by being in 3rd year, feeling the anxiety of needing to finish up things + frustration of things not working your work.
