Potato and Leek Soup



Yes! Another soup from me! I'm a soup girl *slurp!* There is something comforting and heart-warming to this soup and so easy!

The other reason why I like making soups so much is because...they are cheap and fill you up. On a usual week we spread the budget in a way that we get to have some expensive ingredients (seafood..etc) and not so expensive ones.

Bacon bits gave it a salty touch. It adds a bite to it that compliments potato and leek soup so well.


Potato and Leek Soup
1 huge leek-sliced thinly
5 chopped potatoes. I used royal blue.
1L of stock
1 tablespoon of garlic
1 tablespoon of olive oil
Sea Salt and Cracked Pepper

In a soup pot, gently heat the oil up. Add the garlic and cook till brown. Add leek and cook till it's soft. Include the potatoes and stock in. Turn the heat up till liquid is boiling. This will take about 5-10minutes. Simmer for another 15-20 minutes or so. Cool. Using a hand blender, whizz it through till smooth. Return to heat for about 5 minutes. Season. Ladle and serve with bacon bits.

Bacon Bits
1 packet of 98% fat free bacon

chopped into tiny pieces. Fry them over mediaum heat till brown.
