Bacon and Mushroom Brushetta



It's a funny thing how your body gets accustomed to routine. Sunday lunches are usually a quick affair. Popping a cordless telephone underneath one ear while making a 3 course lunch isn't exactly what I would usually do.

This is what typically happens on a late Sunday morning:

While gathering up ingrediants, Daphne starts dialing numbers (thank goodness for the memory function on the phone..can you imagine looking at the calling card and pressing more than 15 numbers, while trying to cut mushrooms?).

The phone rings...and grandma usually answers
Daphne: Hi popo!
Grandma: Hey! Have you had rice yet? (direct translation from Cantonese-it actually means have you had your lunch/dinner).

Daphne looking at the bacon and mushrooms that she is frying and feeling guilty that it's not exactly a proper Chinese meal that she is preparing... says: "no..not yet, cooking now"

20 minutes later...
Grandma: So how, finished cooking?
Daphne: "err.. actually, I have finished eating."
Grandma: "wah! So fast?!!!"

and the phone get passed on to my mum and dad and the conversation continues.

So Grandma, if you are wondering what I ate last Sunday while on the phone..this was it! =)



Bacon and Mushroom Brushetta
2 cups of chopped mushrooms
1 tsp of chopped garlic
lean bacon chopped
4-6 pieces of fresh bread
Shaved Parmesan cheese

1) Heat pan. Fry bacon till fragrant. Add garlic and mushrooms.

2) Grill bread.

3) Assemble! Sprinkle cheese on top. Enjoy!

That's a nice twist to tomato-based bruschetta.

That's comfort food at it's best! What could be better than a thick slice of toasted country bread with plenty of goodies on it? Nothing! :-)

gimme bacon, cheese and bread and i am a happy girl hehe yum! u know...my sous chef "black faces" me (black face being a cantonese verb) every time i throw ideas on having bread for dinner HAHA

Another Italian treat from your good self! I normally just buy this stuff rather than attempting myself. Shame on me, really, you showed how homemade can be so much better!

Lovely~ I normally use basil and olive oil as dressing though, top with cherry tomato~

Haha, lovely, sweet popo. That is one of my favs - mushroom bruschetta. It doesn't usually come with bacon, the ones we get at cafes but it must be really tasty with the addition of it.
