Quick Fried Rice


I love a good fried rice. Like greedy instant noodles, quick fried rice is simple to cook and a good way to use leftover veges in the fridge.

It's rare that I order fried rice in a restaurant in Australia. Many times, the "fire" or heat of the wok isn't strong enough. Worse still, fried rice is white (!?!) with lots of frozen vegetables bits in it. I'm assuming that they hit the work with generous amount of oil, leftover white rice, msg, salt and frozen veges.

Here, I used a combination of frozen and fresh veges.

My "must" for fried rice- either chai siew or lau chong (chinese cured sausages).

Quick Fried Rice
2 lupchong (soaked in hot water and remove casing)
1 bowl of chinese mushrooms (dried shitake) soak in hot water for 10-15 mins. Drain and sliced.
2 cups of frozen vegetables
2 cups of cold rice
1 cup of fresh veges of your choice.
2-3 tablespoons of dark soya sauce
3-4 tablespoons of light soya sauce
1 teaspoon of maggi seasoning sauce
3 tablespoons of chinese wine or brandy
egg
pepper


Method
1) Place sliced lupchong in a pan. Heat it gently till slightly crispy. This will take about 5-10 mins.
2) Drain some of the oil. Crack up the heat and add cold rice. Toss and turn.
3) Add all other veges. Stirfry quickly
4) Add all sauces and wine. Keep tossing!
5) Remember that the pan should be really really hot.
6) Crack an egg in the middle. When it is semi-done, mix the rice with it.
7) Served with some fried shallots.

I try not to have so much of outside fried rice esp when i was in UK cause those rice from leftover may not be fresh!

I love fried rice but my girl now doesn't like it. :( So haven't been cooking much of it. It's the simplest dish isn't it? And I love char siew in it too.

fattyboybakes- thanks. I used basmati rice instead of jasmine and i think that makes a difference.

singarishgirl-hopefully your girl will like it when she is slightly older. =) mum's homemade fried rice is the best. Yeah it is! U can't fail in this I think. haha. 2nd dish I learned in college. Such a good way to use up char siew too.
